New and Improved Chicken BBQ

The Bishop Edward C. O’Leary Council #13181 annually hosts a Chicken BBQ each summer. Last year we were unable to have the BBQ due to the pandemic, and this year we wanted to make it extra special to welcome the community back to gathering together. We were also aware of the fact that not everyone would be comfortable with meeting in person, so we made sure to offer both in-person and take-out service.
The Chicken BBQ involves the efforts of several Brother Knights and their wives to prepare the side dishes on the day before the event, and then to cook and serve the food on the day of the event.
In order to make it a little different than years past, we pushed the date back to late August in the hopes that the timing would be better with respect to the pandemic, but also to hopefully catch families that have finished their summer activities and are getting ready to send their children back to school. Another benefit to the later date was the ability to take advantage of the availability of local corn-on-the-cob, something we couldn’t offer in July.
Our Chicken BBQ features meals that include a ½ chicken, cole slaw, potato salad, corn, bread, beverages and dessert. We served approximately 130 meals and the feedback from the event was excellent. The decision to make this a special event paid off and the community really seemed to enjoy it.
